    Fudgy No Bake Brownies

    Would you like to sink your teeth into these ultimately chocolaty & fudgy no-bake brownies? Yes, you read it right, these brownies are made without baking and requires less than 5 ingredients found in your pantry.

    I love the ease of no-bake desserts especially cakes. You all have loved my No-Bake Eggless Fererro Rocher Mousse Cake and the No-Bake Icebox Cheesecake.

    It’s time I share my Best No-Bake Brownie recipe with you too.

    This brownie recipe is a chocolate lovers dream! It is the easiest brownie recipe that you will ever make. These rich chocolate brownies are all fudge, chewy and eggless too.

    Two layers of chocolaty goodness –

    The bottom layer is 100% fudge brownie.

    The top layer is rich and decadent chocolate ganache with marbled white chocolate swirls.

    The design might look complicated but I promise you it is one easy and impressive way to frost your bakes.

    A great baking activity to do with kids during the holidays. I love making these with my son. Believe me, it is so much fun when you include kids.

    No bake brownies cut and ready to be served.

    My Secret for making fudgy brownies without baking –

    Ingredients to make brownies on a white booard.

    • While baked brownies need a lot of ingredients, I make these with only 3 main ingredients –
    • All you need is graham crackers or any sweet crackers of your choice.
    • Cocoa Powder for the rich chocolaty taste &
    • Condensed Milk for binding everything together.
    • It is exactly like a graham cracker fudge.
    • Now you could stop right here or top it with some chocolate chips, walnuts or toppings of your choice.
    • Or you can add an extra layer of chocolate goodness by topping the brownie with an easy ganache frosting.
    • You can make it more appealing with a simple marble swirl using melted white chocolate.

    Step by step instructions to make unbaked brownies –

    The first thing I do is break graham crackers roughly and process in a Food Processor until sand-like.

    • Then I place condensed milk in a big bowl and microwave for 30 seconds to loosen up.
    • In the next step, I add in the cocoa powder and vanilla and stir until smooth and lump-free.
    • I fold in the cracker crumbs & stir until the cracker crumbs are coated well & come together like a sticky dough.

    Making the brownie mixture

    • Then I double line an 8” square pan with parchment paper for easy removal of brownie layer on.
    • Dab some oil on your finger before pressing the crumb mixture into the pan to avoid the brownie mixture to stick on my fingers.
    • Blob the mixture into the pan and press it down with my fingers until leveled.
    • Cover it with a lid or foil (so that it doesn’t dry out) and place it in the fridge (not freezer) to chill.

    You may just top the brownie layer with nuts and chocolate chips or add an extra chocolate layer like I did.

    It’s now time to work on the frosting layer-

    • Now prepare the marble ganache layer mentioned in the recipe below.
    • Melt the white chocolate with cream for making marble swirls.

    Adding ganache to the no-bake brownies –

    • I take out the brownie from the fridge.
    • Top it with chocolate ganache and spread evenly.
    • Put blobs of white chocolate over the ganache.

    • Pass a toothpick or a knife on the top layer to create a marble effect, not cutting through the brownie.
    • Just swirl randomly on the top as shown in the photo.

    Put it back in the fridge and let it sit for 8 hours or overnight before cutting through.

    How do the unbaked brownies taste?

    These chocolate brownies are all fudge and not at all cake-like. Every piece is chewy and decadent.

    How to store no-bake brownies?

    These brownies keep well in the fridge for a week.

    Helpful tips to make the best “No-Bake Brownies” –

    • Line the pan with parchment paper for easy removal of brownies.
    • Let the base chill and set in the fridge for at least 5 hours.
    • You can just make the base and top it with nuts and chocolate chips.
    • If making the frosting, let the brownies sit overnight in the fridge before cutting.

    Fudgy No-Bake Brownies ( Just 15 minutes prep time)

    These fudgy no-bake brownies are so easy to make with graham crackers and condensed milk. They are chewy and eggless too. Always a hit with the kids. Makes great edible gifts!

    Ingredients

    • For no bake brownie layer -
    • 18 graham crackers approx 3 cups cracker crumbs
    • 1 teaspoon pure vanilla extract
    • 3.5 tablespoons cocoa powder
    • 1 can sweetened condensed milk 14 oz
    • For chocolate ganache layer
    • ¾ cup bittersweet chocolate chips
    • 6 tablespoons heavy cream
    • 2 teaspoons butter
    • Pinch of salt
    • For White chocolate marble swirls -
    • ¼ cup white chocolate chips
    • 2 teaspoons heavy cream

    Instructions

    • Preparing the base brownie
    • Break graham crackers roughly and process in a food Processor until sand like.
    • Place condensed milk in a big bowl and microwave for 30 seconds to loosen up.
    • Add in the cocoa powder and vanilla and stir until smooth and lump free.
    • Fold in the cracker crumbs.
    • Stir until mixed well.
    • Double line a 8” square pan with parchment paper for easy removal of brownie layer on.
    • Dab some oil on your finger before pressing the crumb mixture into the pan to avoid sticking.
    • Blob the mixture into the pan and press it down with your fingers until leveled.
    • Cover it with a lid or foil and place it in the fridge (not freezer) to chill.
    • Now prepare the ganache layer.
    • In a small bowl add all ingredients for bittersweet chocolate layer.
    • Microwave for 30 seconds. Take it out and stir.
    • It won’t melt this time.
    • Repeat microwaving again for 30 seconds. Remove the bowl and stir until chocolate has melted and becomes a smooth lump free sauce.
    • If not melted repeat at 10 second interval.
    • For white chocolate swirl-
    • In another bowl add in white Chocolate and cream.
    • Microwave for 1 minute on 50% power stopping mid way and stirring.
    • Remove the bowl and stir until chocolate has melted and becomes a smooth lump free sauce.
    • Layering the brownies -
    • Take out the brownie from the fridge.
    • Top it with chocolate ganache.
    • Spread evenly.
    • Put blobs of white chocolate over the ganache.
    • Pass a toothpick or a knife on the top layer to create marble effect , not cutting through the brownie.
    • Just swirl randomly on the top as shown in the photo.

    Notes

    1 cup used =240 ml
    I have used Nabisco Graham crackers (18 long ones).
    You can use digestive biscuits or other cookies too.
    Please do not use evaporated milk, heavy cream or half and half in place of sweetened condensed milk.
    Vanilla is optional, you could use almond, peppermint or orange extract for interesting flavor.
    You may add 2 teaspoons instant coffee for Mocha Brownies.

    These brownies keep well in the fridge for a week.

    • If making the marble frosting, let the brownies set overnight in the fridge before cutting.
    For chocolate ganache -
    Microwave in total for 1-minute stopping and stirring at 30 seconds interval. Chocolate should melt with residual heat.
    Alternatively, you can make the ganache on the stovetop using double boiler method or heat the cream in a pot and pour over chocolate, mix until smooth.
