What is a chocolate truffle?

A chocolate truffle is nothing but a fancy name given to rolled chocolate ganache. It is a small round ball made with just heavy cream and chocolate traditionally dusted with cocoa. You can roll these truffle balls in a variety of fancy toppings that I will cover in this post. A luxurious homemade dessert can’t get easier than this!

Anyone can make them!

  • You do not have to be a seasoned chef or a professional chocolatier to make these truffles.
  • There is no need to temper chocolate or handle it with extreme care.
  • Truffles is indeed a child’s play.
  • In fact, it is my favorite activity to do with kids. A no-bake and a no-cook recipe that is so easy for everyone to make. The holiday season is here, so consider making them with your kids.

How to make chocolate truffles at home.

  • In a bowl add the chocolate chips. If you are using a chocolate bar, chop it into very small pieces. Warm up heavy cream in a saucepan on medium heat over the stovetop.
  • Or microwave in a microwave-safe bowl until a simmer. Let it come to a simmer, not a rolling boil.
  • Pour the warm cream over the chocolate. Let it stand for a minute undisturbed.
  • Now gently stir it until the chocolate is completely melted and forms a smooth mixture.
  • Cover and let it chill in the refrigerator for at least 3 hours. Or until it is stiff scoopable consistency that you can roll between your palms. I like to set it overnight.

Rolling truffles.

Steps to make chocolate truffles. The balls are ready to be rolled in the toppings.
  • Set up the truffle station with the chilled mixture, assorted toppings to roll them, and a dishcloth. Wear food-grade gloves if available.
  • Now scoop the set mixture also known as ganache with a spoon. Roll it between your palms. It should be sticky but not liquid or batter-like.
  • Once the truffles are rolled in desired toppings they won’t stick anymore. Make all the truffle balls before rolling them in the toppings.

Truffle Toppings & Variations.

The best part of this recipe is that you can make so many variations just by rolling them in these fancy toppings. Given below are some popular options.  

Unsweetened Cocoa powder – Classic and delicious.

Finely chopped nuts – Use one or a mix of your favorite nuts like pistachio, walnuts, and pecans.

Desiccated coconut – Sweetened or unsweetened.

Fancy Sprinkles – Choose colors according to the event or theme. Use smaller size sprinkles.

Colorful sugar – makes them sparkly.

Dehydrated strawberry or beet powder – For someone who loves pink. Think Baby showers, anniversaries, and, Valentine’s Day!

Edible gold/silver dust – To make it shine and look next-level luxe.

Melted Chocolate – You can dip the truffles in your choice of dark or white chocolate melted chocolate for a fancier truffle. Top it with some flaky sea salt for an amazing taste.

Flavor it up.

Fruit extracts – Classic vanilla can never go wrong. But you can make the chocolate truffles more amazing by just swapping them with pure extracts of your choice. I would recommend stirring a teaspoon of orange, mint extract into the ganache.

Coffee Truffles – Stir in 2 teaspoons of instant coffee powder while heating the cream.

Zest – Add 1 tablespoon of lemon or orange zest to the ganache mixture after you add the extract for a fruity freshness in your truffles.

Vegan Chocolate truffles.

Simply use full-fat coconut milk or cream and dairy-free semi-sweet or dark chocolate.

Homemade Chocolate Truffles (Easy Recipe)

Chocolate truffles are so easy to make at home with chocolate and heavy cream. Roll them in variety of toppings to make edible gifts.

Ingredients

  • 16 ounces Dark or semi-sweet chocolate Chips or chopped into pieces
  • 1 cup Heavy cream
  • 1 teaspoon pure vanilla extract optional

To roll truffles (your choice)

  • 3 tablespoons Cocoa Powder
  • 3 tablespoons Chocolate sprinkles
  • 3 tablespoons Desiccated unsweetened Coconut
  • 3 tablespoons Coarsely chopped nuts
  • Rose petals
  • Fancy color sprinkles

Instructions

To make truffle mixture.

  • In a bowl add the chocolate chips. If you are using a chocolate bar, chop it into very small pieces.

  • Or microwave in a microwave-safe bowl until a simmer.

  • Now gently stir it until the chocolate is completely melted and forms a smooth mixture.
  • Add in vanilla, flavoring, zest, or any extract at this point. Mix well.
  • Cover and let it chill in the refrigerator for at least 3 hours.
  • Or until it is stiff scoopable consistency that you can roll between your palms.
  • I like to set it overnight.

For Rolling truffles.

  • Set up the truffle station with the chilled mixture, assorted toppings to roll them, and a dishcloth to wipe out any mess.
  • Wear food-grade gloves if available.
  • Now scoop the set mixture also known as ganache with a spoon.
  • Roll it between your palms. It should be sticky but not liquid or batter-like.
  • Once the truffles are rolled in desired toppings they won’t stick anymore.
  • Make all the truffle balls before rolling them in the toppings.
  • Keep them in an airtight container.
  • Best served chilled, straight out of the refrigerator, not the freezer.

Notes

Important tips to consider.

  1. The chocolate ganache once set has to be scoopable consistency. So refrigerating it for a few hours is important.
  2. During the process, if the chocolate seems to melt and not hold shape, pop it in the freezer for 15-20 minutes and then proceed.
  3. It is less messy if you roll all the truffles into balls first and then roll them in the desired toppings.
  4. The truffles should be sticky enough to hold the toppings. But for some reason, if the sprinkles or nuts do not stick to the truffles, roll each truffle a few times in your hand to soften them. The heat from the hands will make the chocolate sticky enough for the toppings to adhere well.
  5. Use a mini ice cream scoop for less messy hands. Just scoop and drop them into the topping. Roll evenly.

Best way to store truffles

  • These truffles will stay good at room temperature for a day in a cool dry place.
  • Refrigerate them for 2 weeks. They taste the best right out of the fridge.
  • Freeze them for 3 months. Defrost it overnight in the fridge or for 2 hours over the counter.
