Vegan roasted corn and beans pico de gallo

Vegan roasted corn and beans pico de gallo is a more nutritious spin on the traditional pico de gallo or salsa fresca which is otherwise made with fresh tomatoes. You can call it a fancy salsa packed with nothing but extra goodness. 

This version has an addition of roasted fresh corn , peppers, onions and some black beans . Plus a generous squeeze of lemon juice makes it absolutely irresistible .

Vegan roasted corn and beans pico de gallo is one easy and healthy snack option to munch on anytime of the day. 

I love to whip it up on playdates or summer picnics too . 

So when I made this healthy bowl for my son’s play date , I thought why not share it with you. Not very fancy pictures , clicked by my phone 🙂

Seeing the bowl polished off  between all the play and giggles makes me happy and proud . The kids don’t even realise that they just had a big serving of veggies and protein . And that makes you a super mom right!

One cup of cooked black beans provides 15 grams of protein and fibre each. Plus it has zero fat and packed with  magnesium , folate and B1.

And why kids, this snack is for everyone. 

Is it only me or even you get those evening hunger pangs. Oh I get super hungry by 4 pm  and need to munch on something.

I always stock up cans of beans for quick snack like this which is healthy and filling. Plus super quick and a no brainer. And  this snack is pretty low in calories too. 

I love to eat it with chips of course and sometimes more healthier side like baked pita chips, whole grain toasted breads , crackers or khakras. So sorted until dinner. 

Other ways to enjoy Vegan roasted corn and beans pico de gallo-

Toss it with your salad .

Have it over morning toast and spread.

Add it to your burrito bowl or wrap .

Add it to your favorite dip and much more. 

Make sure to make a big bowl for the entire family as it is very addictive.

You may store leftover pico de gallo in a airtight container for up to 2 days.

Vegan roasted corn and beans pico de gallo

Snack on this healthy pico de gallo all day long . Great for entertaining guests before dinner and for kids play date. Vegan and gluten free.

Cuisine Mexican
Prep Time 10 minutes
Total Time 10 minutes
Adjustable Servings -5 cups approx

Ingredients

  • 2 cups deseeded and chopped fresh tomatoes
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 15 oz can black beans or 11/2 cup beans drained and washed
  • 2 sweet corns roasted and peeled
  • 1 teaspoon dried
  • Juice of one big lemon – around 2 tablespoon
  • ¼ teaspoon paprika *
  • Salt to taste
  • Couple of twists of black pepper

Instructions

  • Just mix everything in a big bowl.
  • Taste test and adjust seasoning or lemon juice.
  • Chill until serving.

Notes

Skip paprika if you don’t want to add spice .
You may even add chopped green chilies if not making it for kids.
You may add in freshly chopped cilantro .
You may add beans of your choice like chickpea, canelli , black eye peas , rajma .
