Watermelon gazpacho

This no cook healthy and tasty soup is ready in minutes. Every ingredient in this soup will cool your senses leaving you refreshing and energetic. . A Perfect summer soup.

  • 4 tsp sweet basil seeds glass approx
  • 2 cups cubed watermelon
  • 1 small red tomato chopped
  • Steamed Half a beet optional
  • 1 freshly squeezed blood orange very high in antioxidant ( optional - I have used)
  • <span class="mceItemHidden" data-mce-bogus="1"><span></span>1 tbsp evoo</span>
  • 2 tsp freshly squeezed lemon
  • <span class="mceItemHidden" data-mce-bogus="1"><span></span>Pinch of cayenne pepper/red mirch powder - for the kick optional </span>
  • 1 tsp grounded fennel optional
  • 1 tsp balsamic vinegar optional
  • 6-7 sprigs of fresh mint leaves
  • Rock salt to taste
  • 1 tsp freshly grated ginger
  • 1 tbsp Finely chopped cucumber - for the crunch


  • Soak sweet basil seeds in 4 tbsp warm water. Keep aside.It will swell up in 10 mins.
  • <span class="mceItemHidden" data-mce-bogus="1"><span></span>meanwhile Except sabja/ sweet basil seeds ,grind everything together in a blender until smooth .</span>
  • Taste test and make adjustments if needed.
  • Sieve it if you wish ..
  • Chill for few hours if desired or enjoy immediately.
  • Scoop some soaked basil seeds in the glasses .. Then slowly pour soup on top .
  • Just before serving,add some chopped cucumber


This soup tastes best chilled. If you desire to have it immediately I suggest chilling the watermelon, tomatoes, beets before hand.
I have used seedless watermelon.
Adjust sweetness to your taste.
