Vegan summer berry salad with strawberry balsamic vinaigrette
Vegan summer berry salad with strawberry balsamic vinaigrette. Packed with nutrients and anti-oxidants ,it makes a great side, lunch pack or picnic menu addition . Perfect to satiate evening hunger pangs. Easy and yum. Gluten free.
Divide the greens and berries in two serving bowls.
Top with avocado as mentioned above
For the dressing
Place all ingredients except chilly flakes in the blender and blend it until smooth and emulsified , say for 20 seconds .
Just before serving the salad , drizzle in some strawberry vinaigrette and sprinkle some chilly flakes if desired. Mix well before eating.
Notes
Use greens of your choice. Skip avocado if not available. Substitute balsamic vinegar with rice or any other vinegar of your choice or even lemon juice. Use desired berries. Add protein to make it more filling . Skip chilly flakes if not preferred .
