This no cook healthy and tasty soup is ready in minutes. Every ingredient in this soup will cool your senses leaving you refreshing and energetic. . A Perfect summer soup.

1teaspoongrounded fenneloptional
1teaspoonbalsamic vinegaroptional
6-7sprigs of fresh mint leaves
Rock salt to taste
1teaspoonfreshly grated ginger
1tablespoonFinely chopped cucumber - for the crunch
Instructions
Soak sweet basil seeds in 4 tablespoon warm water. Keep aside.It will swell up in 10 mins.

Taste test and make adjustments if needed.
Sieve it if you wish ..
Chill for few hours if desired or enjoy immediately.
Scoop some soaked basil seeds in the glasses .. Then slowly pour soup on top .
Just before serving,add some chopped cucumber
Notes
This soup tastes best chilled. If you desire to have it immediately I suggest chilling the watermelon, tomatoes, beets before hand. I have used seedless watermelon. Adjust sweetness to your taste.
