    Just as the name suggests – green goddess dressing is lip smacking and heavenly. Its silky smooth texture just melts in your mouth. 

    It is extremely versatile too- use it as a dressing or a dip , a simple drizzle on salads, slather it on sandwiches,parathas,  dollop it over pizzas and pastas, nachos , crackers ,quesadillas , tostadas .. The list is endless!! 

    It can pep up any boring dish too adding so much refreshing flavor. 

    Dips and dressings are my best bet when I am super busy and still want to put up a nice healthy and yummy  dinner without spending much time in the kitchen.

    Now you will ask me why homemade ? Just buy it from the store and get it done with.

    But think about it – if you are a  dressing fan like me and always want to try different ones how many bottles will you have to stock up. And think of all the preservatives and unnecessary things you will put in your body like high fructose corn syrup, high sodium, artificial colors to name a few.

    The best part of making these at home is you can come up with your desired combinations and you have full control over whatever ingredients you use. 

    Plus most of the dressings doesn’t need cooking and can be made in minutes. 

    I make this dressing  differently every time depending on ingredients on hand . 

    So today the hero of this dressing is avocados  – who doesn’t like them. They are so rich and buttery in taste and considered as healthy fats. Avocados are packed with fiber , vitamin K and they help absorption of anti oxidants and nutrients  found in other foods . So now you have one more reason to add avocados to your food. 

    Made in a jiffy ,gone in a jiffy.

    Green Goddess Dressing

    No cook - super easy -Green goddess dressing - made in a jiffy.Absolutely lip smacking and versatile.
    Prep Time 3 minutes
    Cook Time 2 minutes
    Total Time 5 minutes

    Ingredients

    • 3 tablespoon evoo extra virgin olive oil
    • 1 heaped tablespoon mayo
    • 2 heaped tablespoon sour cream
    • 2 -3 teaspoon lemon juice
    • 1 teaspoon apple cider vinegar
    • 1 avocado scooped and chopped
    • ¼ cup loosely packed basil leaves
    • 1 teaspoon Freshly grated garlic
    • 2 tablespoon green bell peppers chopped
    • 2 tablespoon spring onions used green part only
    • Salt to taste
    • dash of Pepper
    • 1 teaspoon green chilly deseeded chopped - I used Serrano peppers .. U can Use any chillies
    • 3-4 tablespoon water to thin depending on usage as a dressing or a dip

    Instructions

    • Blend everything together in a blender/ mixer for 1 minute.
    • Give it a quick stir .
    • Again blend it for a minute or until smooth.
    • Taste test .
    • Done

    Notes

    As I have mentioned I make this dressing many ways - depending on my mood and ingredients available in my pantry
    You can replace the mayonnaise with sour cream or vice versa
    more possible substitutes -cream cheese, Greek yogurt, hung curd , silken tofu , almond or peanut butter etc as the cream part
    Use parsley , cilantro , mint , chives , spinach , celery etc for green part
    you can omit bell peppers if you do not like
    There is nothing right or wrong about a dressing - use the combinations u think will compliment well and u are good to go .. Hope u all will try it and come up with your lovely combinations

      Khushboo, I am so in love with your recipes. Yours is the only blog I follow for recipes( as I prefer videos than documentary ;)).
