How to make a healthy special mother’s day breakfast

I take pride in saying “Everything I am today is because of my Mom” . Happy Mother’s day to all you wonderful Mommies out there!!

Our mother means the world to us so this Mother’s Day let us do something special for her. Something thoughtful, something fun and gourmet. My mom always says “Never skip your breakfast” . Can she ever be wrong? Nahh.. breakfast is indeed important to start off your day well. 

So let’s throw her a mini breakfast party and a “HEALTHY” one. She always takes care of our likes , dislikes , nutrition and taste. So this time let her relax and you whip a delicious healthy breakfast for her. 

Putting up a healthier breakfast spread is quiet easy. Keep in mind what she likes and work on those lines. Being away from home , this day I miss my mom the most. I hope to celebrate this day with her soon! But if you are one of those lucky ones who can be with your mom , please do something special . Remember all the times your Mom made you feel special ? Now it’s your time to express your love to her. 

By the way I started off with the idea of making a Mother’s Day post and share my love for my mom virtually. I was discussing the same with my husband and my 5 year old was so excited to join me in making this extra special . 

Let’s get started 

We have beautiful decor for Birthday’s so why not for Mother’s Day!!

Raid your nearby craft stores and you will find some great stuff to make this day special. 

Target, Walmart , Jo Ann’s , Michael’s will all have some cool crafty stuff to suit your needs. 

My mom loves pink so you see this breakfast scene is all pinky pretty. 

On my recent trip to Target I was happy to find this entire set with a lovely pink Tray , a #1 Mom badge, a cute Happy Mother’s day pick , a card and a cool banner saying I <3 MOM. I instantly picked it up. If you do not find a banner or any decor it’s completely fine. The next thing on the list will make up for it . 

Next thing that you need for your breakfast party is a No Brainer … Flowers it is !!!!

Flowers make any occasion special in such an effortless way. Just pick the one’s your mom like or if you are not sure about her choice then pick the one’s you like 🙂

A greeting card is a cherry on the top . If you are not very expressive , the card will take care of everything. You may further personalize it by writing a few words , whatever you feel about your mom just write in there. 

 

Now the most important question. What to make? You don’t have to be pro chef to make your mom a wonderful breakfast. Believe me whatever you make , she is going to love it more than anything on this planet. 

I have some very simple recipes for you today that are healthy and VEGAN too. 

This menu was decided by my 5 year old and doing this together has been the best Mother’s day for me . 

  1. What will be the breakfast drink?

You can make her , her favorite smoothie, tea or coffee. 

or you can try your hands on this Tropical Chia Parfait . It’s healthy, filling and utterly delicious!

This parfait uses frozen diced mangoes, pineapples , bananas , Silk coconut milk . The base being chia pudding and topped with topped with fresh fruits plus granola. Very simple to assemble but it will definitely impress mommy dear. 

Recipe for this Tropical Chia parfait – 

¼ cup chia seeds

 1 cup coconut water / liquid of your choice

1 teaspoon agave/ maple syrup *

For smoothie –

¼ cup frozen pineapples chunks

½ cup mango chunks

1 banana in rough slices

1 cup light coconut milk

1 tablespoon lemon juice

Pinch of cinnamon

For topping-

Fresh or frozen fruits

Granola / cereal of your choice.

Method

Mix chia seeds and agave in coconut water for 10 -15 minutes . I like to soak it overnight in the fridge.

Once it gels up it’s ready to use.

In a high powered blender, blend all ingredients called for the smoothie .

Divide the chia in 2 glasses .

Top it with the thick smoothie and additional toppings.

Notes- 

You may take this parfait a a guideline and blend in fruits of your choice.

You may soak chia seeds in almond milk or milk of your choice. 

If Chia is unavailable , skip it and top it up with her favorite cereal . 

Frozen fruits will give a thick pudding like consistency, however you may choose to use fruits not frozen and reduce liquid.

Unused soaked chia stays well in the fridge up to a week. 

2. To bake or not to bake?

Well that is your personal choice . It depends on how much time you have on hand. 

You may pick up some croissants , danish or muffins from your local bakery or if you are interested to bake something healthy try these easy and delicious  Banana oat muffins . The recipe link is here.

3. What else can we have for breakfast that is easy to put up , healthy and delicious?

You may make your mom’s favorite sandwich, quesadilla, pancakes or warm toast . You can even do bagels with her favorite spread . 

My son decided to make these easy open faced hummus bagel toasts with assorted veggie toppings for me. I am amazed that at this age he knows what I like 🙂 He has seen me gorging on these on busy days. Very simple recipe and easy to assemble . 

I love bagel thins and you will find the stocked up in my pantry. 

The spread used is Roasted Red pepper hummus. Hummus is one healthy spread that I love to snack on.  I love how versatile and protein packed hummus is. The addition of Red Pepper just takes this Classic recipe up a notch. 

I love making hummus at home but never shy away from stocking up my favorite for hectic days. 

Different varieties of hummus are already available in store or you can make this at home too. 

The toppings used are Avocados because we can eat them everyday 🙂

Some cucumber, tomatoes , lettuce and almonds.
