December is here and so is Christmas baking. Yayyy! So have you decided what will you make for Christmas?Honestly, Christmas is just an excuse for me to share this wonderful healthy vegan brownies recipe with you. This Christmas treat your kids with this wonderful version of brownies which are as good as the indulging ones. . Not only they are easy to make and decorate but also quiet healthy and delicious.
They are dense , intensely chocolaty , oh so fudgy like a chocolate bar and one of my favorite recipes that I have developed over the time.
Two main reasons for sharing this healthy version-
First – My son – He just loves sweets. His never ending demands of cookies and cakes always keeps me busy experimenting healthier versions of the same.
And these are happily approved by him.
Second reason – My husband – He is kinda anti healthy deserts . According to him if its healthy it won’t be tasty . A big critic of whatever I make and these brownies are approved by him too .
It’s absolutely true that healthy ones always differ from the indulging ones , very difficult to mimic , but these brownies come really close. And an absolute winner because it does not have all purpose flour, all the extra processed sugars , or butter . Saying that , it is still moist , fudgy and yum with no compromise on taste.
So what is healthy according to you?
If you ask me then just substituting apf with wheat is not the answer . What about all the sugar. As brownies have a lot of cocoa , sweetness is equally required . This recipe definitely ditches a lot of processed sugar with the substitutes used.
So what are we doing different here-
Substituting apf with multigrain/ wheat and oats flour
Substituting the whooping amount of sugar with homemade applesauce , agave nectar/ honey and raw sugar .
Substituting butter with peanut butter and oil.
Adding extra protein/ omega with flaxseed meal.
These ingredients make the final product way healthier.
These healthy vegan brownies taste a bit earthy because of multi grain and oats compared to the all purpose flour ones , but at the end of the day they are downright delicious and healthy .
Plus they are vegan, vegan ,vegan!!
And as its festive season , I have quickly decorated them as Christmas tree brownie pops with chocolate drizzle and some accents . The decoration part took less than 15 minutes. How easy and pretty is that !!
So let’s get started , hope you like this recipe as much as we do and treat your loved ones with something healthy .
Please read the notes for possible substitutions too.
Lets start with homemade apple sauce. You can of course use store bought applesauce or replace it with banana puree too.
A dash of cinnamon just adds so much flavor to applesauce , you will be tempted to eat it all just by itself –
Have a teaspoon or two when sweet cravings strike – Ahaaa so healthy and a great option to satiate your cravings.
- 3 medium size apples
- 1/2 cup water
- pinch of cinnamon optional
- 1 tablespoon lemon juice
Heat water in a saucepan.
Meantime, peel , core and dice the apples
Once the water starts to simmer add lemon juice and apples to it. Add in the cinnamon powder .
Cover loosely and let it cook until softened - for 15-20 minutes on low-medium flame.
Stir occasionally in between.
Add more water if required.
Let it cool down and blend it until a smooth puree.
If you do not have cinnamon , skip it. If you have whole cinnamon spice, add it since the beginning and discard it before blending the apples.
Lemon juice is used to prevent apples from turning black.
Applesauce is pretty thick so add more water only if its needed.
Now the brownie part – easy , all you have to do is –
measure and sift dry ingredients in on bowl
wet ingredients in another
I have used creamy peanut butter and its quiet thick , hence I have quick blended the wet ingredients in a mixer /blender until smooth.
then mix both – fold together with a spatula , no whipper or beater required as they are brownies not a cake . We do not want them spongy and fluffy. We want them fudgy and dense.
Then bake it, cool it , decorate it . Tadaa, easy peasy christmasy brownies are ready !!
You can decorate it the way you want, so many possibilities , just be creative 🙂
I have used green wilton candy melts chocolate to decorate these healthy vegan brownies. You can use any white chocolate – melt it and add in desired candy colors – note- please do not use gel colors, chocolate will seize, only oil based candy colors works with chocolate.
I have used lollipop sticks , instead you can use ice cream sticks , pretzels , candy cane too .
You can go for buttercream as well – check out my easy buttercream recipe here .
PS: decoration is not vegan , feel free to use vegan chocolate for the same.
Preparing the pan – An important step
I have used a spring form pan , hence just lined the bottom with parchment round . brushed with oil and dusted with flour .
If you are baking in another pans , make sure you double line it with an overhang of parchment for easy removal as its done for any other brownies.
Pan size used-
I have used 9” round springform pan.
Any 8” or 9” square or round pan works great . The cooking time and thickness may vary a bit.
healthy vegan brownies
- 1 cup/ 140 grams multigrain or wheat flour
- ¼ cup / 30 grams oats flour*
- ¼ cup / 52 grams unsweetened cocoa powder
- ¼ cup raw sugar *
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 tablespoon / 8 grams flaxseed meal*
- 3 tablespoon warm water*
- 1 cup/ 230 ml applesauce* - recipe and method mentioned above
- ¾ cup / 231 grams agave nectar or honey
- 5 tablespoon /88 grams peanut butter *
- 2 tablespoon canola oil*
- ¼ cup water or more*
Pre heat oven to 350 degree f/ 180 degree c .
Now create flaxseed meal gel by mixing 1 tbsp flaxseed meal to 3 tbsp water , keep aside for 5 minutes. It will turn gel like.
Sift dry ingredients in one bowl .
Quick blend nut butter, applesauce and flaxseed meal gel to form a smooth paste. We are doing this as peanut butter is quiet thick and its difficult to fold it in the batter.
Now add the thick paste and agave nectar, water to the dry ingredients , mix well with a spatula/ spoon until lump free . Use cut and fold method , Do not beat with a blender or over mix.
Taste test the batter and pour in the prepared pan . Tap it gently on the surface and bake on the middle rack for 28-32 minutes or until the toothpick comes out with fewer crumbs and not batter . Mine was done at 29 minute mark. Do not over bake . Let it cool on a cooling rack . Place in the fridge for 3-4 hours or overnight and then cut for clean cut edges.
These brownies are intensely dense , fudgy and chocolaty . If you you prefer bit on a sweeter side reduce cocoa and water by 1 tablespoon.
Total amount of flour is 1 ¼ cup – you can skip oats flour and use wheat only.
Honey can be substituted for agave nectar
I use raw sugar, use preferred sugar / sugarfree options .
Substitute flaxseed meal with 4 tablespoon thick yogurt
Any nut butter can be used instead of peanut butter- for example almond or hazelnut butter.
Substitute applesauce with banana puree
Substitute canola with your choice of healthy flavorless oils.
The batter is supposed to be thick, if its too thick ,add some water -1 tablespoon at a time. The reason being flour quality differs and absorbs different amounts of liquid.
We do not want a cake , we want brownies, hence no whippers or beaters used.
In short, this is a very forgiving healthy recipe ,and all the mentioned substitutions work great.
yummm , so fudgy – care to have a bite 🙂
These brownies taste great straight out of the fridge , but tastes even heavenly if you warm it 15-20 seconds in the microwave and serve it with some ice cream .
Storing the brownies–
Store in the fridge for up to 4 days .
and freezer for 1 month wrapped in cling wrap and foil individually
Other healthy desserts that you my like are –
Truly speaking kids are kids , they will demand sweets and they do not care if you put sugar , apf , honey , fruits etc . They do not care if its healthy or unhealthy , they do not care how you made it all they care about is that it’s a sweet , its chocolaty and its delicious , and amidst all the indulging ones ,these healthy brownies surely steal the show.
Wishing you all a very happy and healthy holiday! Let it snow, let it snow, let it snow 🙂
